What is the difference between think about "what we have done" and "what we did" in the previous year?

If you are thinking about last year, you need to use:
What we did…
Use the simple past (did) when speaking about a finished past action.
Use the present perfect (have done) when the action is not finished yet, OR you do not give a specific finished time. ‘Previous year’ is a specific finished time so you cannot use the present perfect.
Past simple: What we did last year/yesterday/last month/in 2018 (all finished times) was….renovate the bathroom/ raise $10,000 / etc.
Present perfect: What we’ve done (this year/ today (all optional unfinished times)) was… renovate the bathroom / raise $10,000 /etc.
